Joe's Beef Jerky Recipe

Ingredients:
- 2 lb. of lean ground beef
- 1/4 c. soy sauce
- 1 tsp. paprika
- 1 tsp. black pepper
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 tsp. tenderizer (I didn't use this but regular salt will do)
- 2 tsp. curing salt (I used a Smoked Salt instead)
- 2 Tb. liquid smoke (I found this at the grocery store)
- 2 Tb. Worcestershire
- 2 Tb. brown sugar
Directions:
- Mix all the ingredients into the ground beef I used my wife's Kitchen Aide big mixer but you can do it by hand like making hamburgers.
- Cover the bowl and let it merinate for a while. I let mine stay in the fridge overnight
- I used a cookie gun with a flat nozzle to make the strips but if you don't have that you can flatten out handful sizes of beef between 2 sheets of waxed paper using a rolling pin. Make them as thin or thick as you like, too thin and they will stick to the paper. Then cut them into strips using a pizza cutter! Trial & error in this area.
- I have a food dehydrator so I used that and it took about 5 hrs to get them how I like them. I flip them every once and a while as well. If you don't have one bake them in the oven on low for as long as needed (not sure how long I never used the oven)
- You can add spices like Cayan on the strips or mix to give it some bite!
